The Process of Cold Pressing Olive Oil
The first step in the production of is the harvesting of the olives. Elanthy is a superior organic extra virgin olive oil, our olives are harvested entirely by hand, rather than by machine They are then sorted to remove any leaves, stems, or twigs.
Once the olives have been sorted, they are washed to remove any dirt or debris. This is important to ensure that the oil is of high quality and free from any impurities.
After washing, the olives are crushed to release the oil. Traditionally, this was done using large stone mills, but today, most producers use a modern mechanical process. The crushing process should be done carefully to avoid heating the olives and compromising the quality of the oil.
The crushed olives are then mixed to form a paste. This paste is then stirred to help release the oil from the fruit.
Once the paste has been mixed, it is transferred to a press where the oil is separated from the paste. In this case a hydraulic press is used to extract the oil from the paste.
